The results of the survey conducted to measure consumers perception about the consumption experience of Sgambaro Khorasan Pasta.
When talking about pasta, Italy’s got a long-lasting tradition of excellence. Nonetheless, a lot of consumers are forced to avoid traditional durum wheat pasta because of feelings of heaviness and digestive difficulties. The research goal, conducted by Mérieux NutriSciences Italia between May and June 2024 on Sgambaro Khorasan pasta, was exactly to test these aspects, underlining how this typology could represent a valid alternative.
Sgambaro Khorasan pasta, available in six different cuts, is realized with Khorasan wheat flour and water, ingredients coming from Italian organic farming, without the use of additives. Pasta is packed in 100% paper packs, using water based inks and glues for lower emissions.
The profile of the survey participants
The research involved 100 consumers, men and women equally divided, aging 30 to 60. All of the participants shared the habit of avoiding traditional durum wheat pasta because of feelings of heaviness and low digestibility. None was celiac or gluten intolerant.
The results
The survey participants report a very positive experience after the continuative consumption of Sgambaro Khorasan pasta. The majority noticed a feeling of lightness and an improvement in digestibility after having consumed it for a prolonged period.
95% of the interviewed stated to have found this pasta more digestible compared to durum wheat, while 94% appreciated the feeling of lightness it offers. These data confirm the effectiveness of Khorasan wheat in providing a lighter and more digestible alternative to traditional pasta.
83% of consumers stated that they would purchase again Sgambaro Khorasan pasta. Among the reasons of this success there are the flavor, the consistency, the cooking resistance and its capacity to bind well with the sauce.
More then 80% of consumers indicated Sgambaro Khorasan pasta as a product of high quality, light, digestible and easy to match with the recipes. The perception of stickiness was very limited, with 8 over 10 consumers finding the pasta not at all or slightly sticky. Moreover, 78% of the interviewed expressed the wish to continue to consume it in the future.
The recipe confirms that Sgambaro Khorasan pasta is an excellent choice for somebody looking for light and easy digestible pasta without giving up on flavor and quality. This product, obtained from the processing of Khorasan wheat , represents a valid and appreciated alternative to whoever wishes for a balanced and tasty diet.
