Our Environmental Choices: Data, Evidence and Further Information

Sgambaro S.p.A. is a pasta manufacturer with its own on-site mill, specialising in conventional and organic durum wheat semolina pasta, spelt and Khorasan wheat specialities, as well as the production of milled cereal products.

Since 2003, Sgambaro has held the voluntary product certification “Grano Duro Italiano” (Certificate No. 1179). Issued by CSQA – Certificazioni Sicurezza Qualità Alimentare, this certification confirms that the durum wheat semolina and durum wheat semolina pasta produced by the company are made from durum wheat grown exclusively in Italy.

Sgambaro produces pasta using 100% certified Italian durum wheat. Once delivered to the production site, the wheat is stored in the company’s own silos and subsequently processed in the mill adjacent to the pasta factory. After milling, the semolina moves directly to pasta production, without the need for road transport between the two facilities.

In 2025, 100% of the electricity purchased by Sgambaro was covered by Guarantees of Origin for electricity from renewable sources (view the document HERE).

In addition to purchasing electricity from renewable sources, Sgambaro installed a 175 kWp photovoltaic system in 2025 on the rooftops of its mill and part of its pasta production facility.

Sgambaro has been producing organic pasta for over 20 years. Products marketed as organic are subject to the control and certification system established under EU legislation on organic production; the control body is ICEA. For more information,

For certain product lines, Sgambaro has Environmental Product Declarations (EPDs) based on Life Cycle Assessment (LCA) studies and covering the specific products and system boundaries defined in each declaration. The underlying LCAs assess the potential environmental impacts associated with the products’ life cycles, from wheat cultivation through to distribution, in accordance with the methodologies and system boundaries specified in the respective EPDs. The EPDs for the three product lines are available HERE.

In 2013, Sgambaro S.p.A. published its first Environmental Product Declaration (EPD) for durum wheat semolina pasta, based on a life cycle assessment (LCA) of the product. Among the environmental indicators covered by the applicable methodology, the assessment quantified the greenhouse gas emissions associated with 1 kg of pasta, within the system boundaries specified in the EPD. Over the years, Sgambaro has extended this approach to other product lines, and EPDs are currently available for three product lines.

Each year, Sgambaro updates the life cycle assessment (LCA) covering all semolina and pasta produced by Molino e Pastificio Sgambaro S.p.A., in accordance with the international standard ISO 14040. The assessment covers the following processes: wheat cultivation, wheat transport, semolina production, pasta production, the use of auxiliary materials during pasta production, the use of packaging materials, employee transport and the company’s own distribution activities. Among the indicators assessed, it quantifies greenhouse gas emissions expressed in kg CO₂e. The assessment undergoes third-party verification by CSQA, as documented by Certificate No. 63383.

SUPPORT FOR FOREST AND CONSERVATION PROJECTS

For over 10 years, Sgambaro has supported projects aimed at conserving and enhancing ecosystems and the ecosystem services they provide.

Between 2020 and 2024, Sgambaro supported tree-planting and forest conservation projects through WOWnature®. According to documentation provided by WOWnature®, the initiatives supported during this period are associated with CO₂-related figures totalling more than 10,000 tonnes. These figures are based on the methodology adopted by WOWnature®, which is available HERE.

Support for these projects is reported separately from the emissions generated by Sgambaro’s operations and does not, in itself, imply that those emissions have been eliminated or neutralised.

The initiatives supported include projects carried out in partnership with WOWnature®, involving the planting and care of 4,600 trees, as well as forest conservation, restoration and enhancement activities in Italy and abroad.

In 2025, Sgambaro also supported forestry projects aimed at conserving ecosystems and maintaining or enhancing carbon sequestration and storage services, including projects in Lombardy and Brazil.

This support was provided through FSC®-certified forestry projects in Italy and abroad. The supporting documentation and the quantities associated with Sgambaro’s contribution are available at the following LINK.

SGAMBARO’S ACTIONS TO MEASURE AND REDUCE CO₂ EMISSIONS

Durum wheat transport:

Since 2003, Sgambaro has held the voluntary “Grano Duro Italiano” product certification (Certificate No. 1179). This certification confirms that the certified durum wheat semolina and the pasta made from it are produced using durum wheat grown exclusively in Italy.

Based on 2025 procurement data, the durum wheat used by Sgambaro S.p.A. travelled an average distance of approximately 150 km from its place of origin to Sgambaro’s production facility. According to internal calculations based on the Ecoinvent 3.12 database, this transport is associated with approximately 0.028 kg CO₂e per kg of wheat. For illustrative purposes, applying the same methodology to a hypothetical sourcing scenario from Canada, involving 4,000 km of overland transport to a port on Canada’s east coast and 6,000 km by sea to Italy, the estimated transport-related emissions would be approximately 0.83 kg CO₂e per kg of wheat.

This comparison relates exclusively to the transport of raw material and does not represent a comparison of the products’ overall environmental footprints.

Mill adjacent to the pasta factory:

The durum wheat is delivered to our production site and stored in our silos. The mill and pasta production facility are adjacent to each other: after milling, the semolina is transferred directly to the pasta production process, without the need for road transport between the two facilities.

For illustrative purposes, an internal calculation based on the Ecoinvent 3.12 database indicates that transporting 1 kg of semolina by road over a distance of 100 km would be associated with approximately 19 g of CO₂e emissions. Applying the same methodology to the quantity of semolina produced at Sgambaro’s mill in 2025, transporting this quantity by road over a hypothetical distance of 100 km would be associated with approximately 324 tonnes of CO₂e emissions.

This estimate relates exclusively to a hypothetical transport scenario used for comparison purposes. It does not represent emissions actually generated or subsequently offset or removed.

Use of energy from renewable sources:

In 2025, 100% of the electricity purchased by Sgambaro was covered by Guarantees of Origin for electricity from renewable sources (view the document HERE).

Sourcing electricity from renewable sources reduces the greenhouse gas emissions associated with electricity consumption compared with an equivalent scenario based on the Italian national electricity mix.

According to an internal calculation based on the Ecoinvent 3.12 database, the electricity required to produce 1 kg of pasta is associated with approximately 19 g CO₂e under Sgambaro’s electricity sourcing arlinement, compared with approximately 84 g CO₂e in an equivalent scenario based on the national electricity mix (2025 data). The comparison relates exclusively to emissions associated with electricity consumption during production and does not represent the overall carbon footprint of 1 kg of pasta.

The electricity used by Sgambaro comes from renewable sources certified through Guarantees of Origin. This information relates exclusively to electricity and not to the organisation’s overall energy requirements, which also include natural gas consumption.

In 2025, based on the total quantity of pasta produced, the electricity supplies used were associated, according to an internal calculation based on ecoinvent 3.12, with approximately 278 tonnes of CO₂e. Applying the same methodology to a hypothetical scenario based on the Italian national electricity mix, the emissions associated with electricity would amount to approximately 1,230 tonnes of CO₂e.

The estimated difference between the two scenarios is therefore approximately 952 tonnes of CO₂e. This comparison covers only the emissions associated with electricity used in production and does not represent the overall carbon footprint of the pasta or the company.

Product packaging

Packaging materials are among the elements considered when assessing a product’s environmental impacts, from packaging production through to end-of-life management.

The packaging used for Sgambaro’s organic product lines has been assessed as recyclable with paper under the Aticelca 501 recyclability assessment system, achieving a Level A result (Aticelca licence No. 11423-0003). The packaging used for Sgambaro’s Etichetta Gialla line has been assessed as recyclable with paper under the same system, achieving a Level C result (Aticelca licence No. 11119-0002). In addition, the packaging used for the BIO and Grano Duro Italiano lines incorporates FSC®-certified paper-based materials, as indicated on the packaging.

In 2019, the packaging for the 500 g format of Sgambaro’s Etichetta Gialla line changed from polypropylene packaging to packaging made from a combination of polypropylene and paper. In 2022, the packaging for the 500 g format of Sgambaro’s organic lines changed from polypropylene packaging to paper packaging.
